Use the Food

I’ve had so much on my mind here, been running around doing errands to prep for my surgery, working out like a fiend . . . and still, the CSA share just keeps.on.coming. It’s been loaded these last couple of weeks: cukes and zukes and tomatoes and the sweetest sweet corn EVAH. Squash – summer and pattypan. Fresh basil and dill and oh, just lovely, tasty stuff. Moroccan Lentil Soup

 
 

I’ve decided we need to eat more lentils. They’re a terrific source of protein, they cook up quickly and they’re versatile. Think of them as the boneless, skinless chicken breast of the vegetarian world . . . .  So to that end, this week I tried out this new recipe and it’s going to be a regular (to the extent we have those) at our house.  It’s zingy (more or less, depending on your taste for cayenne) and flavorful and warming.  And quick and easy too.

Is Foreign-Grown Produce Safe?

It’s the dead of winter here in the Northeast, and maybe, just maybe you’re tiring of root vegetables?  Eating locally is one thing, constant deprivation is another.  Pooped out on parsnips? Need some green leafies?  Fresh fruits?  What to do?

I will admit to spending a fortune on organic blueberries and raspberries in the last few weeks (see yesterday’s “What I Ate” post) . . . they’re super-delicious and refreshing on salads and cereal, or just swimming in non-fat kefir “soup” with cinnamon.  And I do buy organic salad greens and baby spinach all year ’round.  A Semi-Sweet reader recently asked me: “What about buying produce from other (read: warm!) countries? Is that safe?”  Well Sweeties, you ask, I answer!

What I Ate

Don’t you just want to put your face in it?  THIS is what healthy food looks like, and it’s EZ.  Baby spinach + blueberries + raspberries + this DELICIOUS and relatively LOW-CAL creamy balsamic dressing.  Get crazy and scatter a few sliced almonds on top.  Pair it up with a couple of Wasa crackers slathered with Laughing Cow Lite/goat cheese/little nut butter and you have a lunch (or dinner) you can be proud of.  Eat up!

Tuesday Tidbit: Greens May Give Diabetes a Red Light

Just another reason to stock up on those hearty leafy greens you see in the market these days: People who eat about 1/1/4 c. daily (that’s a little more than 1 serving) have a 14% lower risk of developing type 2 diabetes. Eaten raw or cooked, leafies like spinach, bok choy and kale contain antioxidants (possible anti-inflammatories), magnesium (linked to lower diabetes risk) and alpha linoleic acid (may cut insulin resistance). A one-two-three punch in your favor!
