P.S. Arugula Pesto Wheat Berry Recipe Still Not My Thing

Tried it mixed with a huge tomato, which I cubed.  Although it was better (lending credibility to my too-much-pesto-hypothesis), I still wasn’t a huge fan.  Don’t know what I’m going to do with all these remaining leftovers!

    Good ideas, Karen, although I live with a cucumber-phobe (husband). I actually thought the olives were good, but salty – that’d probably be my issue w/the feta, too, and I’m not sure how well the feta would go w/the parm . . . but usually I’m a “more cheese is good!” kinda girl!

    I would definitely add some feta, and possibly a diced cucumber, but then that’s pretty much my go-to answer for everything! I love wheatberries with just about everything, but the olives in that recipe strike me as one step too sharp with the arugula and the parm.
