Tuesday Tidbit: Get Saucy

It’s good to have a few little sauces up your sleeve . . . for those times when you’re staring at a piece of fish, or a chicken breast, and you’re uninspired (or unable) to make something special out of it.  Just sauce it up.  You’ll feel better.

EZ Creamy Cilantro Sauce (from the Nutrition Action Healthletter)

1 bunch of cilantro
juice of 1 lime
1/4 c. reduced fat sour cream
1/4 t. salt

 

Pulse all the ingredients in a food processor, just until smooth. 

Spoon over 1 1/2 lbs. of grilled or sauteed boneless, skinless chicken breasts or grilled fish.  I also think this would be great as a sauce for fish or chicken soft-tacos.
