I tried to find the “non-grocery store” kales b/c I thought they might be more tender, but couldn’t locate any (as my local farm stand was close, of course). Regardless – this salad is terrific even with the toughest kale. It will be a regular on my dinner table! (with enough for leftovers for me!)
