This one was a hit. I am pregnant and the added sweetness of the oranges was so appealing to me… and to my 2 year old! Another winner for the tot! He loved it as much as I did, served with broccoli. Even the baby in tow gave extra kicks – I swear she (?) loved it too.
Since it was just the little one and I today, I have leftovers and I am wondering if I can turn the leftovers into some type of a cold salad for tomorrow. It was SO YUMMY!!! I loved every part – the sweetness of the orange, the salty of the cheese and the spicy of the onion. Fantastic… and fast and easy.
