I’ll have to try this recipe! I just had a bowl of butternut squash and apple soup at a cafe yesterday. The flavor the apple adds is so lovely.

Yummy! Thanks for the inspiration! I make a version of this soup in which I blend half of the apples and leave the rest in cooked chunks. It adds an interesting twist but you need a firm apple. Also, although it is time consuming, I find that roasting squash before blending for a squash soup makes an even richer flavor.

I do love butternut squash so this sounds perfect to me. With apple it’s such a perfect pair. This recipe sounds so familiar that I feel like I made it, or something similar, long before I had a blog.
