I finally made this yesterday and am enjoying again today. I used leeks instead of the onions and frozen meatballs in place of the chicken. I forgot the lemon yesterday, but remembered today.

So delicious!

Oh wow, my family is going to love this because it has all their favorite ingredients, plus a break from quinoa. I'm off to grab some cilantro so I can cook this tonight.

I will remember to make extra cilantro pesto to freeze. I love having pre-prepared ingredients on hand for nights when I just don't have time to start from scratch.

I will have to check out the Taste of Beirut blog as well.

Cheers!

Sarah

So glad you liked this dish; I always keep some extra cilantro pesto in the freezer for days when I feel too lazy to cook an elaborate meal (frequent occurrence!) and this is so convenient; it adds flavor to your soups as well.
