I also had some cantaloupe salsa once and it was very good – I would guess you could make one with red onion, cilantro, hot pepper, lime juice, salt, maybe some cucumber. I think fruit salsas are the best!

The ideas sound interesting….may have to try the Parmesan/Balsamic Vinegar as I am betting I will be surprised by the taste.
