Sarah - my most recent magazine-find effort was from Rachael Ray's mag (my last issue, actually, before my subscription runs out) - delicious sauteed artichokes with garlic.
Heat 2 T. olive oil over medium heat. Saute 1 large thinly sliced clove of garlic for about 4 minutes , until almost browned. Add 1 can of quartered artichokes, drained and dried on paper towels. Raise the heat to med-high, add salt and pepper to taste, and saute for 4-5 min. Remove from heat, add a handful of chopped flat leaf parsley, and about 1 T. lemon juice.
It was great as a side to our grilled swordfish! (Marinade: olive oil, lemon juice, chopped parsley, and salt & pepper.)
