Monday Funday – Who Wants a Giveaway?

The other day, I was crowing about Coco Lite Pop Cakes on Facebook. What are they, you ask?  Think rice cakes that look like tortillas, about 5″ in diameter. These pop cakes from CocoFoods are available locally at Whole Foods, and by mail order from CocoFoods.  Each bag contains fifteen pop cakes that are 16-calories each (or 20 cal. for the whole wheat version).  Pop Cakes are light, crispy and literally melt in your mouth.  If your store makes them fresh, it’s worth trying to see the special machine in action – the cakes are literally popped like pop corn!

Nutritionally, the cakes are fat-free, sugar-free, preservative-free and are made with real ingredients. Nothing artificial. The good folks at CocoFoods have come out with two new flavors of pop cakes recently – Maui Onion (think of a healthy Fun Yun) and Blueberry Cinnamon. They are delicious additions to an already healthful, tasty lineup. The challenge is to find your favorite toppings – here are some ideas to get you started:

  • Nutella (topped with marshmallow fluff?)
  • Any sort of nut butter (I make a serving of PB2 and schmear it on)
  • Jam/jelly, any kind of fruit butter (pumpkin, pear, apple, etc.)
  • Dollop of mayo and sliced hard cooked egg, sprinkle of salt and freshly ground pepper – especially good on the Maui Onion flavor!
  • Bruschetta base
  • Tuna melt
  • Spreadable cheese (Laughing Cow Light Garlic & Herb is outrageously good on the Maui Onion flavor – can’t wait to try it topped with fresh summer tomato when the time comes!)
  • Crispy, low-cal. pizza crust – top with your fav toppings
  • Healthy taco shell: Cooked ground beef/turkey, Shredded lettuce, tomatoes, shredded cheese & taco sauce
  • Use instead of chips with chili, guacamole, salsas, hummus & other dips
  • Whipped butter sprinkled with cinnamon & sugar
  • Fruit “pizzas” – spread with nut butter or jam and top with a variety of thinly sliced fruits. Sprinkle with cinnamon – fun for kids & grownups too!

    I like CocoPops almost as much as I like Semisweet!! I’ve only had the original flavor, so the thought of something new is exciting! We love to watch them fly off the machine at Wegman’s – and love them fresh with hummus (although I will be trying the combos mentions above, too). I love salty, buttery popcorn as my crunchy snack, but usually opt for a crisp Gala apple because I can grab one more quickly. (I subscribe and like you on FB already). Now – off to tell my friends about the giveaway….

    These sound delish!! I already subscribe and like Semi-Sweet on FB so, my favorite crunchy snack are things that are not good for you so I don’t buy them and keep them in my house. I would be stoked to try Coco Lite Pop cakes!!!
