Baked Cod With Dill Over Lemon-Garlic Spinach

I don’t know what I’d do without Google.  I use it all.the.flippin’.time. for cooking.  I often research ingredients I’ve never cooked with (garlic scapes, for example) and find inspiration for things I have on hand and want to use . . . last night was one of those nights.  I had some beautiful spinach and fresh dill from my Picadilly haul on Wednesday and a nice piece of cod I’d gotten at the market earlier . . . plugged those into Google and voila!  Up popped this recipe, which D. has dubbed “restaurant-worthy.”  Be still, my heart.

Even if you don’t have the ingredients on hand, this one’s worth a trip to procure them.  It’s so fast, and there is so little cleanup.  I didn’t alter it a bit – too tired to tinker.  So I’m providing you with the link and the commendation.  It’s a keeper.  Although we enjoyed it side-dish-less, I think it’d be great with some steamed new potatoes topped with a little butter, salt & pepper.

    Where’d the recipe go?! I cooked this last week and it was amazingly good…. I even made a variation on the theme another night. I was hoping to try out variation 3 this evening but the recipe’s no longer there – just your comments….:-(

    Being Malaysian, it has not been easy for me to find the ingredients it took to cook up a western or mediterranean meal. The only place for me to get it here is from Cold Storage. It’s challenging to even find olive oil here, and I’ll need to find the translation for most ingredients just so I can find them.

    I know what you mean… I find everything through Google. The next time we get cod fillets, I’m definitely trying that recipe out.

    sarah, this was SO good and SO easy. i did have to tell john about david’s comment so that he would say the same thing. sometimes that doesn’t work (d’ooh!), but it did last night! I have all but the dill and spinach from last week, so tomorrow may be a green soup day!
